Yeast rolls are the perfect finger food for parties, potlucks, and casual get-togethers. They are very easy to prepare and you can have them ready to serve in under an hour. For party preparation, all you need is an already prepared yeast roll and a food processor. The following instructions will guide you in preparing this popular appetizer.
First, you should gather all the supplies. A food processor is optional, but it will make your job easier. Some people choose to use a pastry bag in place of a food processor. A food processor has a blade that cuts through the bread to create large chunks. If you do not own a processor, you can also use a meat grinder or a bread knife to make the small pieces of bread.
Get some or all of the following ingredients ready: Fresh yeast rolls (frozen works best), lemon juice, shortening, sugar, water, and nonfat dry milk. You will also need a cookie cutter, a measuring spoon, nonstick spray, and a wooden skewer. Also make sure that you have rind on hand. If you are using dry yeast rolls, you will need to add it before you start working. If you are using wet yeast rolls, mix them together first before rolling them in the butter. It will make the process go smoother.
Get out your food processor and chop up your yeast rolls into smaller pieces. The smaller pieces have a lower concentration of yeast, so they will take longer to bake. You should use a minimum of 2 tablespoons of yeast per pound of bread. Be careful not to chop them too fine or they will not have the same flavor as if you used whole pieces.
With your wooden skewer, begin rolling the dough into a rough circle. Just be sure that the diameter of the circle is bigger than the thickness of the dough with a wooden skewer. Using a food grade wire, cut the dough in half and then into quarters.
In a large sauce pan or heavy duty non stick skillet, heat enough oil to lightly heat the pans. Place the rolls in one side of the pans and coat with the coating. Once the rolls are coated, turn them over and cook for approximately ten minutes. Flip and cook the other side. When done, remove from heat and allow to cool.
